Orange Zucchini Bread and Orange Cream Cheese Frosting

Happy Halloween everyone! Today’s recipe is the perfect recipe to use up any zucchini you may have left. This zucchini bread recipe is the best zucchini bread I have ever had! The best part of this recipe is that you can make either bread or cake if you add some frosting! Here it is:

IMG_0645 1 First combine your dry ingredients in a bowl. In a separate bowl, beat the sugar, oil, and eggs. Then stir in the cereal, orange zest, and vanilla. Add the dry ingredients to this mix then add the zucchini and mix well.

IMG_0647 1 Grease your bread pan (or cake pan) well and evenly distribute the mix between the pans.

IMG_0648 1Bake at 325° F for 35 minutes or until a toothpick comes out clean.

Let the bread cool in the pans for about 5 minutes then remove the bread and cool completely on a cooling rack. Enjoy!

If you want to make a cake instead of bread, here is how to make orange cream cheese frosting:

IMG_0650 1IMG_0651 1 Beat the cream cheese, margarine, and orange zest until it is light and fluffy. Slowly add the sugar until it reaches spreading consistency. Add some milk if the frosting is too thick. Spread it on the cake (or bread) and enjoy!

Orange Cream Cheese Frosting

  • 3 oz. Cream cheese- softened
  • 1 Tablespoon butter or margarine
  • ½ tsp. orange zest
  • 1 ½ cup confectioners sugar
  • Milk- if needed

In a small bowl, beat cream cheese, margarine, and orange zest until light and fluffy. Gradually add sugar and beat until fluffy and spreading consistency. If the frosting is too thick, add milk a little at a time until it reaches the correct consistency.

Makes 2 loaves

  • 1 cup flour
  • 1 tsp. baking powder
  • ½ tsp. baking soda
  • ¼ tsp. salt
  • 1 tsp. cinnamon
  • ½ tsp. nutmeg
  • ¾ cup sugar
  • ½ cup veg. oil
  • 2 eggs (if you double the recipe, still only use 2 eggs)
  • ½ cup All Bran Cereal
  • 1 ½ tsp. orange zest
  • 1 tsp. vanilla
  • 1 cup grated zucchini
  • ½ cup chopped nuts (optional)

Combine the flour, baking powder, baking soda, salt, and spices. In a large mixing bowl, beat the sugar, oil, and eggs until well combined. Stir in the cereal, orange zest, and vanilla. Add the flour mixture, zucchini, and nuts. Mix well. Grease bread pans and evenly distribute mixture. Bake at 325° F for 35 minutes or until a toothpick comes out clean.
