Bran Muffins

Happy Friday everyone! This week’s recipe is Bran Muffins. These muffins were delicious and healthy. Hope you all enjoy!


First peel and shred your carrots. I used 2 medium sized carrots and ended up with 1 ½ cups of shredded carrots.  Then mix all of the dry ingredients together.  Add egg, milk, honey, and vegetable oil.


Fill the muffin cups about half full.  Bake at 350° F for 15-20 minutes.

  • 1 ½ c. Unprocessed Bran
  • ¼ c. Grapenut cereal
  • 1 c. flour
  • 1 tsp. Baking Powder
  • 1 tsp. Baking Soda
  • ½ tsp. Salt
  • 1½ cups shredded carrots
  • 1 cup mixed dried fruit (optional)
  • 2 egg whites (or 1 egg)
  • ¾ cup milk
  • 1/3 cup honey
  • 3 tsp. vegetable oil

Spray or line muffin tin. Preheat oven to 350° F. Mix dry ingredients, then add wet ingredients. Mix well. Bake at 350° F for 15-20 minutes. Enjoy!
