Brown Bag Microwave Caramel Corn

Happy Friday everybody!  I thought I would continue with my fall recipes this week and give you another recipe that reminds me of fall (although it is delicious any time of the year).  This weeks recipe is caramel corn.  It is a really easy recipe and is made in the microwave.  Here is how to make it:

You will need: unpopped popcorn, brown sugar, corn syrup, butter, baking soda, a large brown paper bag, and an air popper for the popcorn.IMG_1540

First, pop your popcorn and place it in the brown paper bag (a heavier weight bag is best).  IMG_1541Then melt the butter in the microwave.  Once the butter is melted, add the sugar and corn syrup and combine.  IMG_1542Microwave the mixture on high for 3 minutes, or until it boils.  IMG_1543Add the baking soda and begin stirring immediately and quickly.  The mixture will puff up.  IMG_1544Pour the mixture over the popcorn, fold the top of the bag over and shake it up.  IMG_1545 IMG_1548Microwave for 1 1/2 minutes.  Shake.  Microwave for 1 minute. Shake. Microwave for 30 seconds.  Shake.  Microwave for 30 seconds.  Shake.  Dump out on a baking sheet lined with foil.  IMG_1552 IMG_1553Let cool and enjoy!IMG_1554

  • 1/4 cup corn syrup
  • 1 cube (1/2 cup) butter
  • 1/2 tsp. baking soda

First, pop your popcorn and place it in the brown paper bag (a heavier weight bag is best).  Then melt the butter in the microwave.  Once the butter is melted, add the sugar and corn syrup and combine.  Microwave the mixture on high for 3 minutes, or until it boils.  Add the baking soda and begin stirring immediately and quickly.  The mixture will puff up.  Pour the mixture over the popcorn, fold the top of the bag over and shake it up.  Microwave for 1 1/2 minutes.  Shake.  Microwave for 1 minute.
