Pebernodder (Danish Peppernut cookies)

Happy Friday everybody! This week I have been working on a school project about Danish food.  I found a recipe for a Danish christmas cookie called a pebernodder (peppernut in English).  They turned out really good so I thought I would share the recipe with you.

Here is how to make it:

First, sift the flour, sugar, salt, and spices together.  Add the butter, egg, and vanilla.  Mix in a stand mixer or by hand until the dough is an even consistency.  IMG_1559Split the dough into four pieces.  Roll each piece into a long roll.  IMG_1560Break off small even pieces and roll it into balls about the size of a walnut (just the nut, not the shell).  IMG_1561Place on a baking sheet lined with parchment paper.  IMG_1562Bake at 400° for 8-10 minutes.  Enjoy!pebbernodders

Danish Peppernuts (Pebernodder) makes 200 cookies

  • 1 3/4 cup flour
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground cloves
  • 1/2 tsp ground white pepper
  • 1/2 tsp ground cardamom
  • 1/2 tsp ground ginger
  • 1 tsp baking soda
  • 3/4 cup sugar
  • pinch of salt
  • 1/2 cup + 1 Tbsp butter, softened
  • 1 tsp vanilla
  • 1 egg
