Cauliflower Mashed Potatoes

Happy Friday everybody!  This week I have a recipe for cauliflower mashed potatoes for you.  This cauliflower dish is a good substitute for mashed potatoes in any dish and can also be combined with mashed potatoes to sneak in some vegetables into your meals.  Although it may seem a little weird, surprisingly these cauliflower mashed potatoes don’t taste much like cauliflower at all.  Here is how to make them:

You will need: 1 head of cauliflower, 1 cup milk or chicken stock, olive oil, salt and pepper, and butter (optional).

First, clean and cut your cauliflower into small pieces and spread them on a baking sheet.  Then drizzle with olive oil and salt and pepper.  IMG_1866Roast the cauliflower at 400° F for about 15 minutes.  IMG_1867Then put roasted cauliflower, your liquid (milk and butter or chicken stock) and puree until you have reached your desired consistency (I pureed mine for 1-2 minutes).

Then scoop your cauliflower into a bowl and serve or use in place of mashed potatoes in any other dish.  Enjoy! IMG_1873
