Happy Friday everybody! This weeks recipe is for an apple jicama salad that I made in one of my classes this semester. This salad is really simple and refreshing. It works great as a side dish or as a topping for pulled pork. Here is how to make it:
First if you don’t know what jicama is, here is a picture and a brief explanation. Jicama is a root that has a similar texture to apples but looks similar to a raw potato when cut. It takes on a lot of flavor from whatever you season it with but is pretty bland by itself.
Now lets move on to the salad. You need 1 jicama, 2 apples, 1 lemon, and 1 lime.
Peel the jicama and slice it into small sticks. Do the same with the apple (I like to leave the peel on the apple but you can peel the apple if you want to).
Juice the lemon and lime and toss it with the apples and jicama. Enjoy!
