Black Bean and Sweet Corn Quinoa Salad

Happy Friday everybody!  This week I have a salad recipe for you.  This quinoa salad is so good and is pretty easy to make.  The other great thing about this salad is that you can eat it by itself as your main dish or it can be used as a side.  Here is how to make it:

First, heat the olive oil over medium heat and saute the onions for 4-5 minutes, stirring often.  Then add the garlic and stir until the garlic is fragrant.  IMG_1965Add the quinoa  and cover with the broth.  IMG_1967Stir in the cumin, cayenne pepper, salt, and pepper.  IMG_1969Bring the mixture to a boil.  Cover, reduce heat and let simmer for 20 minutes or until all the liquid is absorbed.  IMG_1970Then stir in the corn and black beans.IMG_1971  Finally, stir in the cilantro and enjoy!IMG_1972

Black Bean and Sweet Corn Quinoa Salad

  • 1 Tbsp. olive oil
  • 1/2 medium yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 cup uncooked quinoa
  • 2 cups chicken or vegetable broth
  • 1 tsp. ground cumin
  • 1/4 tsp. cayenne pepper
  • 1/2 tsp. salt
  • 1/2 tsp. black pepper
  • 1 1/2 cups frozen sweet white corn
  • 1-2 (15 ounce) cans black beans, drained and rinsed
  • 1/2 cup cilantro, chopped

NOTE: This salad can be served warm or cold.
