Lemon Bars

Happy Friday everybody!  This week I have a really easy lemon bar recipe for you.  These lemon bars are super simple and the end results are delicious.  Here is how to make them:

First, combine the crust ingredients and mix well.  IMG_1713Press the mixture into the bottom of a greased 9 x 13 inch pan.  Bake the crust at 350° for 15 minutes.  IMG_1718While the crust is cooling, make the filling.  To make the filling, combine the flour, sugar, and baking powder.  Mix in the beaten eggs and lemon juice.  IMG_1719Pour into a slightly cooled crust.  IMG_1722Bake at 350° for 25 minutes or until set.  IMG_1723Let the lemon bars cool and sprinkle with powdered sugar.IMG_1981

Crust:

  • 1 cup soft butter or margarine
  • 1/2  cup powdered sugar
  • 2 cups flour

Filling:

  • 1/4 cup flour
  • 2 cups sugar
  • 1/2 tsp. baking powder
  • 4 eggs, beaten
  • 6 Tbsp. lemon juice
