Cinnamon Rolls

Happy Friday everybody!  This week I have a cinnamon roll recipe for you. The best part about these cinnamon rolls is that you can freeze them before you bake them and bake them later.  Here is how to make them:

First combine the warm water and the yeast.  Then add the sugar to the yeast mixture.IMG_2158  While the yeast is activating, scald the milk.  Once the milk is scalded, add the butter to the cooling milk.  Allow the milk and butter to cool to 110 degrees, then add the yeast mixture.  IMG_2159Next add the eggs.  Add the flour and knead until the dough is smooth and elastic.  IMG_2160Allow to double in size.  While the dough is rising, make the filling.  To make the filling, combine all of the ingredients and beat until smooth.  Once the dough has doubled, roll it out to about 1/8 inch thick.  Spread the filling on the dough leaving the top edge clean.IMG_2161  Roll the dough into a long cylinder and cut into rolls.IMG_2162  Place the rolls on a baking sheet and allow to increase by 1/3.  IMG_2163Bake at 350 degrees for 20-25 minutes or until golden brown.  Allow the rolls to cool before covering them with the cream cheese frosting.IMG_2165

Cinnamon Rolls

Dough

  • 1 cups warm water
  • .75 oz yeast
  • 1/2 cup sugar
  • 1/3 cup soft butter
  • 1 cups milk, scalded
  • 3 eggs
  • 1 1/4 tsp. salt
  • 7 cups flour

Filling

  • 2 cups butter, softened
  • 3 cups brown sugar
  • 6 Tbsp. ground cinnamon
  • 6 Tbsp. chopped nuts or raisins (optional)

Cream Cheese Frosting

  • 4 oz. cream cheese, softened
  • 1/2 cup butter, softened
  • 1 3/4 cup powdered sugar
  • Vanilla extract to taste

Combine the cream cheese, butter and powdered sugar and beat until smooth.
