Butterbeer Fudge

Happy Friday everybody!  In honor of Harry Potters birthday and the release of Harry Potter and The Cursed Child this past Sunday, I thought I would share with you a recipe that I found for butterbeeer fudge.  This recipe is not an original recipe but one that I found here.  I followed her recipe exactly but I ended up assembling my fudge a little differently.  Here is how to make it:

Butterbeer Fudge

  • 3/4 cup Butter
  • 3/4 cup Evaporated Milk
  • 1 Jar Marshmallow Cream (7 oz.)
  • 2 1/2 cups White Sugar
  • 1/4 tsp Salt
  • 1 tsp Rum Extract
  • 1 tsp Butter Flavor
  • 1 1/2 cups Butterscotch Chips
  • 3/4 tsp Vanilla Extract
  • 1/2 cup White Chocolate Chips

First, line an 8×8 pan with wax paper and coat with cooking spray.  Then place the butter, evaporated milk, marshmallow cream, sugar, and salt in a saucepan and bring to a boil. IMG_2265 Once the mixture is boiling, reduce heat and simmer for 7 minutes.  Pour one cup of the mixture into a separate container and add the white chocolate chips and vanilla.IMG_2266  Add the rum extract, butter flavor, and butterscotch chips to the rest.IMG_2268  Pour the butterscotch mix into the bottom of the pan then put dollops of the vanilla fudge all around.IMG_2269  Using a spoon, or other kitchen tool, gently swirl the white fudge into the butterscotch fudge.IMG_2270  Allow to set.  Enjoy!IMG_2271
