Asparagus

Happy Saturday everybody!  I intended to post this recipe yesterday but the day flew by and I didn’t get a chance so you get a Saturday post this week.  This week I am sharing with you my favorite recipe for asparagus.  It is super easy and delicious!  This asparagus works well as a side dish but could also be used to top quinoa, rice, or even pasta.  Here it is:

First, break the bottom of the stalks off then break each stalk into thirds. img_2784 Boil the asparagus pieces for exactly 2 minutes.  img_2785Then toss them in an olive oil, lemon juice, and parmesan cheese mixture. img_2786Enjoy!img_2787

Asparagus

  • 1 bunch of medium sized asparagus (about 1 lb.)
  • 2 Tbsp olive oil
  • 2 Tbsp grated parmesan cheese
  • 2 Tbsp lemon juice
  • Salt and Pepper to taste
