Banana Cookies

Happy Friday everybody!  This week I have a recipe for one of my favorite fall cookies.  These banana cookies are so easy to make and are delicious.  Here is how to make them:

First, mix the dry ingredients together.  Then cream in the shortening, add the eggs, bananas, and vanilla.  img_2346Drop by the teaspoonful onto an ungreased baking sheet.  Sprinkle with cinnamon and sugar.img_2347  Bake at 400 degrees for 10-12 minutes.img_2349

Banana Cookies

  • 2 1/4 cups flour
  • 1 cup sugar
  • 2 tsp. baking powder
  • 1/4 tsp. baking soda
  • 1/4 tsp. salt
  • 2/3 cups shortening
  • 2 eggs-beaten
  • 1 cup mashed ripe bananas (approx.2 bananas)
  • 1 tsp. vanilla

First, mix the dry ingredients together.  Then cream in the shortening, add the eggs, bananas, and vanilla.  Drop by the teaspoonful onto an ungreased baking sheet.  Sprinkle with cinnamon and sugar.  Bake at 400 degrees for 10-12 minutes.

Makes about 3 dozen

Variations: you can also add chocolate chips or nuts if you want.

NOTE: Hand mix.  Do not use an electric mixer, it makes the batter runny and the cookies flat.
