Pumpkin Cookies

Happy Friday everybody!  This week I have a really simple pumpkin cookie recipe for you.  These pumpkin cookies are the perfect fall cookie.  Here is how to make them:

First, cream together the shortening and sugar.  Then add the wet ingredients and stir to combine.img_2563  Add the dry ingredients and mix together.  img_2564Scoop onto trays and bake in a 350 degree oven for 10-15 minutes.img_2565img_2566

Pumpkin Cookies

  • 1/2 cup shortening
  • 1 1/2 cup sugar
  • 1 tsp. vanilla
  • 1 egg
  • 1 cup pumpkin
  • 2 1/2 cups flour
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1 tsp. nutmeg
  • 1 tsp. cinnamon
  • 1 cup chocolate chips (optional)

First, cream together the shortening and sugar.  Then add the wet ingredients and stir to combine.  Add the dry ingredients and mix together.  Scoop onto trays and bake in a 350 degree oven for 10-15 minutes.

NOTE: I triple the recipe and use an entire 29 oz. can of pumpkin.
