Happy Friday everybody! This week I have a recipe for a fresh fruit tart for you. This tart uses the previous three recipes I have posted for sweet tart dough, vanilla cream, and lemon curd. Here is how to make the tart.
First, make and bake the tart dough following the sweet tart dough recipe. Let the tart shell cool completely before continuing. Spread an even layer of lemon curd on the bottom of the tart shell. Then fill with vanilla cream. Cut up your chosen fruits (I used strawberries, kiwis, blackberries, and blueberries) and lay it on top of the vanilla cream in any pattern you want. Brush the fruit with the glaze. Enjoy!
- 8 oz. apple juice
- ½ cup sugar
- 2 Tbsp. cornstarch
Combine the sugar and cornstarch in a bowl. Heat the apple juice on medium, and slowly start adding in the sugar mixture while stirring. Bring to a boil and allow it to cook for about two minutes, or until thickened. Remove from heat and let it cool slightly before using.
